Hi ladies...

On my last go round with phase 1, I never attempted the quiche cups for breakfast. I would like to this time, so I did a seach for quiche cups, and found many with spinach as the crust. I could have sworn I remembered there being a canadian bacon crust instead?! Am I losing it? :)

I hadn't heard of using the spinach as a crust.

Maybe it was this one??? I saved the recipe, but haven't tried it yet.

Baked eggs in Canadian bacon cups

4 large eggs (I use eggbeaters)
4 slices Canadian bacon
1/3 green bell pepper
1/3 red bell pepper
1/3 shallot, minced
1 Tablespoon Canola oil
1 1/3 tablespoons minced fresh herbs such as tarragon, chives, parsley or combination thereof
salt and pepper

Preheat oven to 400 degrees. Remove tops, core, ribs and seeds from bell peppers. Cut them into quarters and flatten to facilitate cutting into small dice. Heat oil over medium high heat and sauté shallots to soften before adding in peppers and cook, stirring often until slightly softened but colors are still bright. Remove from heat and season to taste with salt and black pepper. Lightly grease muffin tin with 4 cups and insert one slice of Canadian bacon into each cup. Divide pepper mixture among both cups and carefully crack one egg into each bacon cup on top of the peppers. Bake in center rack of oven for about 15-20 minutes, or until whites are set but yolks are still slightly runny (bake longer or shorter according to taste.) Season eggs to taste and carefully remove by gently scooping out bacon cups with spoons and rubber spatulas. Serve garnished with fresh herbs. Serves 2.

I've experimented with adding canadian bacon to the original recipe.


Put one slice of Canadian bacon at the bottom of the muffin cup and pour the mixture over top. Note that the spinach, eggs and other ingredients are combined together first.


I have also tried it by lining a 9" pie dish with overlapping slices of canadian bacon, bring the slices up the side a bit too. Then pour the mixture over top.


I also like to experiment with ingredients: lf swiss cheese with asparagus is one of my favorite combinations.

I think I may have been remembering Karen's idea ...I thought it was a canadian bacon 'crust' made in muffin tins...so I bet that's it!

Thanks for your help..I think I might try the other ones out, too! I usually eat PB with celery during P1 for breakfast, but I might make a little more of an effort this time..;)

It comes out pretty good with the canadian bacon. You could also just dice it up and add it to the mixture.

My favorite combo so far is canadian bacon, onion and red bell pepper. With a little shredded cheddar too.
