Thanks for all the wonderful information on this site. It sure is a lot to take in ! I am on Day 3 and hate to admit that I am not a real veggie lover. Any advice on how to keep up with the recommended portions? Is drinking tomato juice acceptacble along with eating a smaller portion of veggies? And, finally, one last question regarding beans...I have never eaten anything other than green/yellow wax beans and "deep browned beans", which I now know are bad. Any suggestions on what type of beans/recipes I can try to ease my way into the bean world?? Again, THANKS SO MUCH FOR THE HELP :)

You can have one cup of V8 or tomato juice for a vegetable serving, it ca n't be used for all your veggie servings.

Hi. Sara gave you some great ideas.


Here are a few more:


* add chick peas or other beans to salads


* veggie strips dipped in hummus or salad dressing make a great veggie snack


*English (seedless) cucumbers with a smear of lf Aloutte cheese


* sautee some sliced peppers, onions, mushrooms, or any combination to keep on hand for omelettes and to have as a 'topping' on burgers or steaks.

Not much of a veggie eater myself. I do have salads daily though and have been making sure that I get in the veggies that I do like. It's limited so it gets boring but I make due.

Thanks for the ideas...they are ALL going to be helpful. I eat salads but just the basics so hopefully thru variety I can learn to like veggies more. I loved (notice the past tense already) baked beans, so the bean tricks I will definately try. Should I buy the beans dry or canned or does it matter?? TIA !

It doesn't matter if the beans are canned or dried. Certainly canned beans are more convenient. Just read the labels to make sure there are no added sugars in the ingredient list.
