I read that you can have tofu in phase 1 - if it's light or silken...well, the firm was on sale :) and it was only 10 calories more than the light - same carbs and same sugar..so, I was just wondering if this is okay?

I love tofu and it's a great snack and meal addition.

Let me know what you know! Thanks!

Wow, well I had a bit more than 1/2 a cup for lunch. I had about a cup of tofu with 1/2 cup white kidney beans and 1 cup sauteed broccoli - I put it together in a time crunch, but it was pretty good meal, actually!

I guess I went overboard on the tofu, eh?

Since tofu is considered a protein on South Beach the amount recommended is a suggested serving size.

It was actually very good :) I started preparing the tofu, just for a snack to have around in between meals.
-I cut up the block of tofu, and added a little less than 1 T olive oil and then lowry's mixed seasoning salt and tossed it all together
-I sauteed the broccoli with PAM with just a tad of the seasoning salt, added it to the tofu
-Then I added in 1/2 can of the white kideny beans to the mix

I don't have a microwave at work, so I couldn't heat it up after I took it out of the fridge in the morning, but it was still very good. The beans were soft and the tofu soaked up the seasoning from the veggies and beans as well - really good combo. And I'm very full/satisfied - not stuffed, just very satisfied. It's nice feeling this way - healthy and satisfied :)

Thanks for your input - it's much appreciated! I just found this message board and I love it - so many great ideas and encouragement.

My husband loves putting seasoned salt on everything!
