So, I don't know which part is affecting me most - the fact that I am eating sugar free pudding like crazy or the fact that I'm drinking 2-3 Diet Pepsi's per day, or that I'm not eating all the amounts of food that I should... or lack of water - it's probably all of it. During the first week, I lost eight pounds. Now, half way through week two and I've gained a pound. I feel all swollen. It's not that time of the month, but it's halfway there, so maybe it's from that? I don't know. I seriously need to read the book, don't I? I am eating all phase 1 safe foods for meals, but I might have a small bite of chocolate a day, or more sugar free pudding or jello than I should... and I am eating dinner late at night! Sometimes between 8-9. I feel like staying on phase one for another month at the rate I'm going. I'm also working out three days a week doing cardio and weights.
Should I just get the book and read more to become more educated, or do you guys have some suggestions?
Also - where do I find that low carb ketchup?? I've been Target, Wal-Mart, Food Lion, Lowes Foods.. and I can't find it anywhere!

Don't get discouraged! I am at about the same place in P1 as you are. I did read the book before I started the diet (got it at a used bookstore), and it was helpful for me because it made me think about how this diet isn't just good for my figure but good for my health as well. It has so much information on how eating healthy can really transform your medical outlook. So now it's somewhat easier for me to turn down foods that are bad for me, because I can't use the excuse that "I'm not really THAT big!" since I know how my food choices impact my health.
That said, if you can't afford to get the book you can get a lot of the information from it on this message board (I've found it to be a lifesaver!). Be sure to read the "getting started" lines because they have lots of information on what kinds of things and how much you should be eating.
Make sure you are eating lots and lots of veggies. It's the only way you are going to get enough fiber in P1. I found that I was a little bloated and constipated when starting P1, even though I was eating lots of veggies, so I also added sugar free metamucil to my day and that helped. Also, drinking lots of water is SO important! And this may be why you are bloated. If you aren't drinking enough water, your body holds on to whatever liquid comes in, so you will actually be more bloated and retain more water when you drink less (opposite of what makes sense, I know!)
Just try to make as many healthy choices as you can. 8 pounds is a lot of weight to lose, so you should be proud! Even if you haven't been able to follow the plan 100% so far, I'm sure the choices you are making are healthier than the choices you were making before. Hang in there!

Sorry you are having such a tough time. I don't think the Diet Pepsi can hurt too much, but the sf puddings are probably the problem. The reason we wait until phase 2 for certain foods is because some foods contain ingredients that can cause cravings. In phase 1 we are learning to detox and get rid of cravings. In phase 2 we can handle cravings better and can start to introduce SB-friendly foods that contain small amounts of craving-causing ingredients (like the modified food starch in the pudding). The theory here is that a little bit in phase 2 isn't going to hurt as much as denying things like chocolate pudding altogether.
My suggestion is to get all non-SB-friendly food AND any phase 2-friendly food out of the house. Stock up on phase 1 foods and make sure you are getting 3 meals AND 3 snacks daily plus all your required food.
I also recommend reading the book. Although we have tons of information here, it really helps to understand the 'science' behind this WOE!

Thank you so much :) I'm going to Target this evneing to see if they have the book. I definitely understand what you're saying about the water/other fluid part. Can we drink something like crystal light and have that be considered part of our water intake??

You can drink crystal light and it does count towards your water intake.
I know it might make things harder for you, but I'd think seriously about giving up diet soda or at least cutting waaaay back on it. Part of the detox aspect of Phase 1 is to lose your cravings for sweet stuff. And there is a LOT of evidence to suggest that artificial sweeteners keep a sweet tooth going.....even that just getting a sweet TASTE can trigger an insulin release, which promotes fat storage. If that sounds crazy, think about how a smell can make your mouth water. Our glands are mysterious things.
Focus on real food, avoid "fake food".
I think this is a very individual thing. I had diet sodas, sugar-free treats, etc. all through my weight loss journey and lost 67lbs and have maintained for well over a year. I know for a fact that I would not be sitting here today wearing a size 2 if someone had told me I had to give up all sweet tasting things. The only way I was successful was to find substitutes. For some of us the idea of giving that stuff up all together is too overwhelming and will end us backfiring and causing us to not even try to lose weight. That was my problem for years. When I finally learned that were better alternatives that still tasted like treats - I could do it.
If it works better for you to give up things completely great. But some of us would just feel deprived and give up.
