No Cottage Cheese Please!

There are so many cottage cheese meals which is too bad because I don't like CC but I digress...I'm preparing myself to start in a few days. This morning I searched and compiled a nice list of breakfast ideas. My next goal is to have a great list of lunch ideas for Phase 1 so I can make a menu (I'm more likely to stick to it that way). All you veterans please "holler back" with your creative ideas.
Last but not least. I'd like to prepare a list of dinners that I can cook for the whole family. I plan to search the board for that tomorrow. However, if you have any ideas, please include them. Tips and good wishes are welcomed!!

You don't ever have to eat cottage cheese on South Beach.

I have fixed some chicken chili that the entire family likes. I made enough for a couple of lunches (and breakfast for me one day) and dinner one night. We made "taco" salad from it and put it over our salad - no taco chips though. But if you were fixing for kids, you could let them have the taco chips. I just make up the recipe as I go along but the first one I used was from allrecipes.com.
Another night we had shish ka bobs. Chicken, beef or shrimp will work. Alternate meat with cherry tomatoes, bell peppers, and onions. We used to eat this with rice but not this time. You could still fix a little rice for the kids if they want it. My kids used to think shish ka bobs were so cool b/c they were on a stick!
I'm not a big cottage cheese fan either. I keep sugar-free jello made and some fat-free Reddi whip in the fridge for my evening sweet. I also bought a bag of sugar-snap peas for my snacks. They were crunchy so my brain almost thought I was eating potato chips.
I would think you might could make some type of Mexican Fajitas - cook the meat, peppers and onions together. Once again, you wouldn't eat the tortillas and you would only use approved garnishes but you could give the kids the tortillas so they can roll theirs up.
Oh, I made the stuff in the book with the ricotta cheese, splenda, and vanilla flavoring. Some folks seem to like it. I didn't. I think if you don't like cottage cheese you might not like this.

Honestly I think in the 2.5 years I have been following South Beach I have had cottage cheese MAYBE 3 times. My dh likes it so I buy it frequently, but its not something I generally eat.
There are endless possibilities for meals, there is no need to follow any specific recipes (like the ones in the book) We have tons of recipes on here for all phases, and most family favorites can be adapted to be South Beach friendly. I never used the meal plans in the book - most of our members don't.

Thank You for all the feedback. I appreciate the tips on where to look for things. I will start a "Meal Ideas" notebook since I have no imagination when it comes to "cooking on the fly". I wish I was talented in that area but I'm not. More often than not, when I try new dishes I don't get feedback from my husband which is code for "I didn't really care for this". He's so nice to me! Oh well, I keep trying. Hopefully, I won't drive him crazy with SB. Knowing him, he'll be really supportive.

Hi Pat. You've already gotten some ideas, but I just wanted to remind you that the South Beach Diet Book (the teal one) has mealplans for each phase and recipes. If you don't have the book you may want to pick it up or borrow it from the library.
Also, whenever I see a recipe I like posted on this board I print it out to keep for future reference.

I like cottage cheese but I have not had a meal of it yet in 4 weeks.
My favorite breakfast:
French Toast Omlette
1 whole egg with 1/4 cup of egg whites
water to mix - probably 2 tbl.
Smart Balance
Sugar Free Maple Syrup
Turn on your broiler
whip the eggs and water together
pour into nonstick pan sprayed with butter flavor PAM
cook slowly on top and then instead of flipping I stick it under the broiled until just set (don't leave the kitchen and keep your eye on it. It only takes a minute or 2)
While cooking mix the following together and heat in microwave
add a 1/2 tsp of Smart Balance
1-2 tbl of SF maple syrup
turn out omlette on plate and pour syrup on it.
I eat this with 2 slices of turkey bacon or FF ham
