Hi SBD'ers :)

I had my 1st attempt w/ making the Mock French Toast and the only problem I encountered was when it came time to flipping it. I felt I let it cook long enough on one side before I flipped it over, but it came out looking like scrambled eggs! ha ha! It did taste good, but does everyone else have this problem?

If I make it in a small skillet, and cook it only on low for just a bit longer than I think I should (the middle looks solid), it flips great.

If I make it in the big skillet, I cook it only on low and then when the middle looks solid, I slice it in quarters with my turner and then turn each quarter. This flips great,too.

Usually..... ;-)

I too, slice it into 4 pieces and then flip each piece, as I have one very large french toast to flip and it will fall apart if i don't do it this way! ; )

Don't flip it. Turn your broiler on as you start to prepare your eggs. When the bottom is set, put it under the broiler with the door slightly open. About a minute should set the top.

Enjoy, I just finished mine with turkey bacon on the side.

Wow thank you everyone! :) I will definitely try slicing it in quarters next time! I was getting a little bored w/ the eggs and this was the perfect alternative.

Hey Laura,

Here's the mock french toast recipe. I haven't tried it yet, so let us know how you like it!!!

Mock French Toast

2 eggs
1/4 cup part-skim ricotta cheese
1 tbsp vanilla extract
sugar substitute to taste
1/4 tsp cinnamon
1/4 tsp nutmeg (optional)

Mix all ingredients in a blender. Cook in a skillet and serve with sugar-free syrup.
