Ready to give it a shot again!

Hi all,
I tried doing this a couple years ago and only got about 5 days into it before I gave up. I think the hardest part is getting headaches and post-workout hunger. I'm definitely ready to try again because I've gained a RIDICULOUS amount of weight lately and I definitely want to kick-start my weight loss. I typically would "diet" by following Phase 2 religiously, but I would like to try to do it right this time and hopefully get better results.
I'm looking for help with snacks and eating out tips while I'm in Phase 1. I say eating out because I'm currently away from home on business and it's inevitable! I would sincerely appreciate any help anyone is willing to throw my way. Which book would be good for this?

Phase 1 Snacks:
nuts (watch limits)
low-fat or fat-free cheese (6g fat or less per ounce)
Laughing Cow Cheese or lf Alouette Cheese spread on celery
veggie strips dipped in salad dressing or hummus
sf jello
sf popsicle or fudge bar
roasted garbanzo beans
olives, roasted red peppers, dill pickles
leftovers
deli meats
tuna salad
grape or cherry tomatoes
homemade soup
