Need easy lunch ideas!

I am only on Day 3, and I am getting tired of a salad every day for lunch. Any other ideas of what I could have? I don't like tomatoes, so anything with those would not work for me.

I eat spagetti squash a lot for lunch. I usually cook it on Sundays, then put it in individual bags for lunches. I add turkey meatballs, frozen veggies and some sauce.

leftovers
soup
chili
lean deli meats
tuna
hard boiled eggs
omelets

Make some hearty stews and pack some up in individual servings for the week. You can get a bunch of frozen veggies and just dump them. You can get your veggies that way.

I always try to cook a little extra for dinner and I use that for lunch paired with a salad or soup.

How about tuna or chicken salad with some mayo, slivered almonds for some crunch, onions, celery, etc. I also use romaine leaves to make turkey "sandwiches" using the leaves as "bread" and stuffing turkey, cheese, a little mayo and mustard.

So weird! I was just going to post this question too...I'm so sick of salads! I'm in P2, but hope I can get some good ideas here!

Phase 2 lunches are SO easy because you can have sandwiches, wraps, etc. I'm having one of my favorite P2 lunches today....


2 Wasa crackers spread with Laughing Cow cheese and topped with sliced english cucumbers and a slice of deli turkey.

Thanks Karen! I think where I'm going wrong is that my sandwiches and wraps end up basically being a salad in a wrap or on some bread :) For some reason (I don't know why) I've recently starting HATING lunch meat. It's so weird...I'm a total meat eater otherwise, but just can't handle lunch meat. I buy the good stuff too. So weird.

I'll just have to try and spend some time this weekend researching alternative lunches for next week!

I poach 3-4 chix breasts every Sundayt in low sodium, low fat chix broth and then slice them up for lunches to put in sandwiches or salads. I don't buy any deli meats. I also make chicken salad, egg salad and tuna salad to mix things up.
