I'm working on planning my menus for Phase 1 (starting Monday, woo hoo!) and I have a question about beans. I see a long list of them and I noticed it has been said that they are important to add.

I was thinking of adding some chickpeas to my daily lunch salad (mixed greens, chicken, tomatos and cucumber as well). Would this work? I don't eat many beans except for in chili...but I can't eat chili every day, ha ha.

I like chickpeas in my salads. I even like kidney beans in there sometimes. Great way to add some protein to a salad that doesn't have meat, or just up your veggie and fiber intake! I think we're allowed 1/2c of beans daily...

I like to try to get in my beans by eating hummus (blended chickpeas) or having lentil salad as a side dish with supper. It is a staple at all our grilling out events. I bring that instead of potato salad and people are usually surprised at how much they like it.

Remember to drink lots of water with beans. The fiber needs the water to help move it all along ;)

I really dislike beans but I'll eat them in chili and also do a search for a roasted red pepper soup that uses pureed white beans to thicken, that is also tasty.
