If your husband has the desire to become healthy, he must learn to enjoy vegetables. That is a hurdle he needs to overcome, because the nutrients found in fruits and veggies are essential to good health.

What are the health benefits of eating fruits and vegetables?

Molecules in the body called "free radicals" cause damage to our cells. Antioxidants found in fruits and vegetables actually combine to neutralize these molecules, slowing down the aging process. Aging of your cells is directly tied to how much antioxidant rich foods you eat over a lifetime. Eating broccoli or an orange each day might not necessarily give you an energy spike like a cup of coffee, but it has a great impact on your health over your entire life. Different fruits and vegetables have different antioxidants – try to eat a variety of both. Dark colored fruits and vegetables have more antioxidants than light.

Well - I highly doubt he has tried every veggie possible, cooked in every way possible and seasoned in every combination possible. So its impossible for him him to say he doesn't like ANY veggies.

People tend to think there are only a few ways to cook veggies. They steam them or maybe microwave them. I don't like them like that either! In fact I won't touch a steamed veggie with a 10ft pole - bleh! And boring. Veggies have amazing culinary potential with some creativity and effort.

#1 Cooking method - this changes the flavor of the veggie. Roasted broccoli tastes nothing like steamed broccoli. Grilled zucchini tastes different than sauteed zucchini. Different cooking methods affect sweetness, texture, etc.
#2 Flavorings - there is more than just salt and pepper for veggies (though salt and pepper are VERY important when cooking veggies!) You can marinade them, you can season them with just about any seasoning or mix of seasonings, you can use fresh herbs, etc.
#3 Combining with other foods - casseroles, soups and stews, chilis, stuffed veggies, etc. also have different tastes. All the flavors meld together. My ds doesn't like zucchini plain but LOVES stuffed zucchini "boats" (we hollow it out, fill with a ground beef mixture and cover with tomato sauce and mozzarella cheese)

I generally find when someone says they don't like veggies its because they have a limited idea of how vegetables can be prepared.

One more idea...

Start by cooking veggies in an unhealthy manner (fried) then once you like them, try cooking them in healthier and healthier ways.

I learned to like sweet potatoes this way! Started out eating greasy sweet potato fries from the pub, and then baked my own in the oven.
