Finishing Phase 1 need advice

Hi!
I'm on my 11 day of Phase I. I feel great I lost 5 pound already. Today I have a chicken salad for lunch and I take out the croutons but ate like 5 of them (mini croutons). I don't know if that can be adverse to my weight loss. On Monday I'm going to start with Phase 2. What sould I do? Enter one carb at a time? How many portions of fiber I need? Please give me an example of a menu for day 1 of Phase 2. (I don't like fish or anything that came from the water). What is the expected weight loss per week during Phase 2 ?

Congratulations on your success in phase 1.
Thanks for the links Cathy. Based on that I make a menu for my day 1 on Phase 2 (today). Please can someone let me know if this is ok.
Breakfast: egg omelet (the ones that came in a container)1 slice turkey ham, 1 slice 100%whole wheat bread, 1 cup decaffeinated coffee with 1% milk.
Lunch: Chicken breast with green salad. 1 medium banana.
Meal: Turkey breast with salad.
Snack: Fat Free berries yougurt
Dessert: Fat free sugar free vanilla puding.
Let me know if I make a good menu, so I can be sure I do it right.
Also, It is alright to eat whole wheat pancakes ( the ones from Aunt Jemaima ). I buy a box of cereal that is 6g sugar and 5g fiber but it's not whole wheat it said multigrain, it's that OK.
