Hello!

I am on day 4 today of Phase 1. I am really looking forward to all the advice and help that this board has to offer. I have several diet limitations, so I need all the help I can get!
Here is a little bit about me.

I am about 5’3” and currently weigh 159 lbs. My goal weight is 135 lbs.

Unfortunately, I am allergic to fresh fruits and vegetables. I can eat cooked or processed fruits and vegetables. I know it sounds weird, even my allergist thought so. I was tested several times just to make sure it was true! I am also allergic to seafood (both fish and shellfish)/
I can eat iceburg lettuce without it bothering me too much. I can eat most vegetables once they have been thoroughly cooked. I cannot usually eat any steamed vegetables without it bothering me. I seem to be only able to eat canned fruit (not frozen) or something that has been cooked into an item (like blueberry pancakes). This makes it difficult for me when it comes to lunches and snacks. The seafood doesn’t bother me because I have always been allergic to it. The fruit/veggie allergy developed about 10 years ago. Before that I was a fruit-aholic. I will sneak a couple of grapes or cherry every once in a while without too much of an effect. More than that I am really uncomfortable (severe itching of the lips, tongue, and throat.) Just a bite of a tomato or cucumber will send me to the ER.

I have 5 wonderful, talented and active children. They keep me and my DH very very busy. Most days, I leave the house at 6:00am and return after 9:00pm. This leaves me very little time for cooking (which I am not that great at anyway)! During the month of July, most of the kids activities take a small break, so I have more evening time. It is a great time for me to try an establish a new way of eating.

I think that is enough about me for now! I am excited to be here and look forward to hearing about everyone’s success! I would also love any recipe suggestions!

The best way to follow this woe (especially with a busy schedule) is to plan ahead. Meal planning is very important. Also, many here try to do a lot of cooking when time permits and then freeze some meals for the week. Another plan is to make double-duty meals. Make one meal that will allow you to use some of the ingredients for another meal.


Although you need to get 4.5 cups of veggies daily, there's really no need to eat raw vegetables. You can cook almost anything. One of our board favorites is to roast veggies (again, this is something that you can make

Thanks for your responses. I haven't tried V8, but I am willing to give it a shot. I know that I cannot drink a glass of orange juice. I think I could probably have dried fruit.
