Barley, Phase 1

hi, I am a newby. On day 2 of Phase 1. Can barley be eaten. I want to make chili with (no carrots) and I like barley in my chili but am not sure if it is allowed.
Also, what happens if we can't eat all the vegies in a day. I am eating protein but I am not the biggest veggie fan,,2 cups a day is about all I can handle. Am I doomed to fail?

thanks so much..I never thought of roasting the veggies (green peppers, etc) I always think of salads or boiled veggies when I think of veggies.
I have not read the south beach diet book (dry reading..LOL), so I am just trying to figure out the diet via this website.
Now on day three,,, I have made a couple of slips (ie. no fat yougurt but it had fruit,,,didn't realize could eat it until I was almost done and also having a hard time with the coffee)
My way of getting through this 2 weeks is to think it is only 2 weeks and I could be up to 10 lbs lighter so it is worth it.(I miss my bread, however, I had a burger last night wrapped in lettuce leaves and I actually enjoyed it)
