What is your favorite P1 meal?

Good evening! I though maybe those of us on P1 could use a little inspiration. I'm sitting here trying to make out my menus for the week and I am kinda' stuck. I thought I'd post some of my favorite P1 ideas and anyone else who wants to can follow! HTH someone!
Breakfast
I love to scramble 1 egg + 1 or 2 whites with 1 oz. rf feta and 1/2 a green pepper. That is usually all I need to stay satisfied until late morning.
Lunch
I am not a big veggie person (yet!) so I tend to eat large spinach salads with approx. 1 C. chopped veggies (carrots, radishes, green peppers, etc.). I add either 3 oz, grilled chicken or 3 oz. water-packed tuna, throw on 1/2 C. garbanzo beans, and some SBD-OK dressing. Yummm!!!
Dinner
This is where I get into a panic, LOL! I need to get it in my head that I need to really plan these out each week. So far I love the SBD Chicken Capri and the SBD Chicken Florentine. I will be trying roasted veggies this week but usually eat green beans. I also have a glass of milk at dinner.
Snacks
For snacks, I like to get in a serving of nuts each day. I usually eat pistachios. I also like to dip veggies in homemade hummus (garbanzos, olive oil, cumin, garlic). For dessert I usually eat a NSA Fudgesicle or one of the ricotta treats.

If you are feeling at all limited or out of ideas, it is almost endless. Really got me motivated!
I want to make the chx cordon bleu soon. Really easy and I know everyone in my family will love! Served with some asparagus mmmmmmm sounds like it could be a favorite of mine!

Here are some of my favorites that got me through phase 1:
Breakfast:
I never get tired of eggs
Morningstar soy sausage patties with melted cheese
Peanut butter mixed with plain yogurt & splenda
Peanut butter/chocolate smoothie
Lunch:
I always make extra dinner so that I'll have leftovers for my lunch.
Cathy beat me to it! I was going to *highly* recommend "Crockpot Pulled Pork."

one dinner I have planned for later this week is Beef tenderloin on the grill, baby portabella mushrooms, then on the grill as well I will wrap in foil and grill green and red peppers with onions. gosh I wish I wasn't working tonight or it would be on the grill today!
Also at our store I found flash frozen Talapia in packs of 2. which would be perfect to bake or pan cook and them save the other one for the next day but maybe over a salad or borken up to make a stuffed tomato.
