Can You Help Me With My Menu, Please?

Hi everyone!

I'm new to your forum and to The South Beach Diet.  I've been searching through several of your posts, but I'm still a little stuck on creating a menu for my first day of Phase 1.  Can you offer me suggestions?  This is what I'm thinking...

Breakfast:  2 eggs with mushrooms; I guess I need to use some oil to cook the eggs in, but I'm not sure which kind to use.

Snack:  1 reduced fat cheese stick

Lunch:  2.5 servings of tuna fish (a can) with 1 tbsp of low fat mayo with 2 servings of carrot sticks

Snack:  15 almonds

Dinner:   1 piece of baked chicken (plain) with lettuce- 2 tbsp salad dressing

I am trying to follow the menu planner in the getting started thread, but I have a feeling I'm missing out on stuff.  Could you guys please help me?

I'm not sure if it is important, but I am trying to lose about 5-10 pounds.  I am currently 5'5 and 138 pounds.  I'm usually a big exerciser, but I haven't been to the gym in about a week.  I plan to go back this Monday.  Thank you for all your help in advance!

My initial review...you don't have any dairy in there; you need to have 2 cups a day.

Hi and welcome - your menu looks fine as Cathy said, but I really wanted to encourage you that SBD food does not have to be so bland or "plain". I noticed you said plain chicken, plain cucumbers, etc. There is NO need for that and it would get SO boring! Please feel free to spice up your menu! You can marinate your chicken, stir fry it w/sauces and veggies, sautee it w/reduction sauces, grill it, stuff it, etc. Same with the cucumbers - no reason you can't dip them in dressing, hummus, etc. I know you are just starting out, but I see so many people fall of the wagon because they feel like they have to eat bland and then get bored.

I totally agree. I think it was the exact opposite for me. We didn't cook much before SB. Now that I'm not buying prepackaged everything I've discovered a whole new world of seasonings. Who knew chicken could do so many things!? (Probably everyone but me.) This diet certainly doesn't have to be bland. Since starting this diet, the only time we eat the same supper more than once in a month is when we are eating leftovers. So many new recipes to try!!
