Hey all- thought I'd join this board, I thought about joining on the south beach website but it's 5 dollars a week! sheesh!
Anyways I'm through week one (it's been 7 days on phase one) and I've lost four pounds. I have another week to go and I don't know what in the world I'm going to eat. I've gotten to the point where I stop eating so much because everything sounds gross. I have to force myself to eat cheese sticks...(gag!).
My cravings have gotten a lot better but I still want sugar sooooo bad. I seem to have lost the ability to tell when I"m hungry, too...weird. anyways just thought I'd share, hope everyone else is doing well!

Hi Goldilocks and welcome to the board. Don't worry about the official SB site, one of our other CLs is a member and passes along info, plus contacts the nutritionists with questions on our behalf if needed. You're doing great. Sorry food doesn't interest you as much but I guess that's better than the opposite, eh? Don't forget to get lots of veggies in. The basic good health plan goes like this:
Eat right. Not too much. Mostly plants.
If you can keep that in your head, you'll do great. Post often and let us help you succeed!!!

Are you varying your menu, trying new recipes, etc.? Do not eat something if it sound gross or makes you gag. This is not a diet, but a lifestyle change. If you don't like cheese sticks, don't eat them. Obviously you cannot continue to choke them down for the next 30,40 or 50 years. So don't do it now. What foods are you eating? What recipes have you tried? What are you craving? Generally we can find SBD friendly substitutes for most things.
How about a nice eggplant lasagna? Just replace the noodles with roasted eggplant slices. Or meatloaf? Just leave out the bread crumbs. Buffalo chicken strips? Peanut stir-fry? Spaghetti squash w/a nice meat sauce? Chicken fajitas w/all the fixings - fat-free refried beans, guac, low-fat sour cream (minus the tortillas) Salmon patties w/curry sauce? Feta and Artichoke stuffed chicken? Chicken skewers w/dipping sauce? Chili? I could go on and on and on. Scroll down to the recipe folder or let me know if you need more ideas/recipes! As for sweets - sugar-free jello, and the ultimate favorite around here - the SBD peanut butter cup (mix a softened sugar-free fudgsicle w/peanut butter and cool whip)
There is an endless amount of variety in South Beach. I have been eating this way for almost 3 years and never once felt bored or deprived with the food.

Thank you guys so much for all the encouragement/advice! It's great to have somewhere to go where you can get help.
ps. when you guys first lost weight did you notice any difference in your looks? i have lost about 4 pounds which you think you would see because I only weighed 128 before but I don't so I'm thinking it's just water weight. (and yes I need to lose weight I'm not anorexic or anything I just have a REALLY small frame my goal is 115 and also have high cholesterol at 22!!! yikes lol!)

Once you are on phase 2 I have an awesome breaded chicken recipe for you! You can do it on strips to make nuggets or on whole chicken breasts
1/3 cup whole wheat flour
Salt and ground black pepper
1 pound boneless, skinless chicken breasts cut lengthwise into 1/2-inch wide strips
1/3 cup milk
1/3 cup grated Parmesan
1/2 cup oats
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
In a shallow dish, combine flour and 1/2 teaspoon each salt and black pepper.
Place milk in a separate shallow dish.
In a third shallow dish or resealable plastic bag, combine parmesan, oats, garlic powder, onion powder. (I whizz this in the food processor for a few pulses) You can also add any spices you like here - sometimes we add some Italian seasoning, other times some chili powderif we feel like spicy, etc.
Dip chicken into flour and turn to coat.
Dip flour-coated chicken into milk and then transfer chicken to oat mixture.
Turn to coat chicken (or shake bag) until well covered with oat mixture.
Place chicken on prepared baking sheet and spray the top of chicken with cooking spray.
Bake 15 minutes, until crust is golden brown and chicken is cooked through. (I bake, then turn on the broiler for a few minutes to really brown/crisp them and get the coating crunchy)
To freeze, I let them cool completely then lay them out on a baking sheet and freeze. Once they are frozen I pack them up into packages that are the amount I think my kids will eat in one meal. To reheat I just pop them in the oven on a baking sheet.
