The first week on SB was fine, I was motivated and really determined to be active and eat healthy. Then, week two came and I just couldn't make myself stay focused. Any ideas on how to keep this diet going?

If you usually beat yourself up over "failing", try to approach your goals from a position of "possibilities" instead. Find ways to use regular rewards to pat yourself on the back and give a word of encouragement. Instead of focusing on what you do wrong, try paying more attention to what you do right!
P.S.- Avoid food rewards- do other little things for yourself:

I agree that it might be time for you to move into phase 2.
Have you weighed yourself?
Phase One IS tough.
But rather than fail completely, i.e. just stop doign the diet altogether, if it's relaly TOO HARD, consider easing into phase 2 by adding fruit and grain in single servings. You will prob still see a weight loss!!
Stuffed peppers, meatloaf, OMG CHILI!!!!
I tend to eat phase 1 meals in the evening.
