'low-fat' and 'light' foods

hi guys-
i know that dr. A says that fat is a sugar blocker, but i guess that what i don't understand is this: why are we drinking skim/1% milk, eating low-fat cheeses, nonfat yogurt etc.? why do the meal plans limit us to (for instance) 2 tbsp. salad dressing? i'm sure there's a perfectly logical answer to all of this...i'm just a little confused.
when i buy ricotta cheese, would i benefit by choosing the low-fat or nonfat version? or should i stick with the part-skim?

There are many reasons we should choose the low-fat version of products.
Cathy gave you the details, but its about balance. Yes, a moderate amount of unsaturated is a great carb competitor. But that doesn't mean we should go hog wild on fat, its still fat. South Beach is about more than just low sugar. It incorporates a number of healthy aspects - high fiber, low fat, low sugar, whole grain, lots of veggies/fruits, etc. Its just a generally healthy and BALANCED way of eating! ;-)
