After researching all last week, and trying to get geared up for this, I am excited to say that....


TODAY IS THE FIRST DAY OF THE REST OF MY SKINNY HEALTY LIFE!!!!


Ok...


So, on the dinner menu for the week:


Tonight:


Pulled pork fajhitas, with some spicy black beans on the side for me, and ww tortillas for the rest of the fam.


Other nights this week:


Sirloin burgers (ww buns for the guys) and spaghetti squash casserole


White chipotle chicken chili


grilled chicken salads


and shoot...there's another one, but I can't quite recall what. Hmmm...something I was going to make with pan roasted broccoli for a side.


And whoever that was that posted the lemon mousse recipe? I worship the ground you walk on. that stuff is AMAZING! I will be having that in the evenings this week for a sweet, with a cup of my passion herbal tea. I think the contrast between those will be a wonderful treat.


I LOVE the way the inside of my fridge looks this week. So so proud. (but OMG, my grocery bill was way high. I know it's somewhat because there were things I needed that'll last a while, but still...DH had to bite his tounge. oops!)


I feel so so much more positive about this than I have any other diet/way of eating in my life. Even more than the first time I went on SBD. Possibly because my age is winning out all arguments "But, I LOVE pizza. But, what about french fries??? But but but" OR, it might be because for the first time ever, when I eat healthy, the rest of the fam will eat what I eat. Period. No stress in trying to provide two different menus.

Congrats on making the plunge into a healthier way of life for life! You are doing your family a great favor is so many ways, not to mention yourself. You will LOVE it even more in a few days and even more in a few weeks. Today is day 12 for me and I feel great.

Your menu looks great...makes me hungry!!!

To get extra veggies in the pulled pork, I add red & yellow peppers to it when I throw it in the crockpot. We love it this way!!!

I think you're going to do great this time!!! I truly believe that eating this way AND feeding you family this way is definitely the way to go. When DH & I started SB back in January, 2007, our DD (12yo) was not so happy about it. But after a few weeks, she definitely came around. Now, she loves pretty much everything I cook and is starting to realize that our healthy way of eating is not only good for us, it can taste good as well!!!

Good luck with your start!!! It will be 'old hand' before you know it!!!

I hear ya, Becky!!!

My DH eats pretty much anything I fix as well. In fact, it was eating TOO WELL that got us in this shape!!! It's just so much easier when everyone has a great attitude about the new way of eating. DD was a little harder to convince, but she's on board now. She loves to taste and critique the new dishes we try. And I'm all for the help with tweaking recipes, if need be.

My hair is still a dark red. I guess it's auburn color. But with more gray than I like to admit!!! I actually have everything from blonde to black in my hair...it's really strange and didn't use to be that way!!! I think I'm leaning toward having something done, as far as the color goes. I just don't know what yet!!!

You'll be back to looking like that picture in no time!!! I was gonna say 'no sweat', but we all know that isn't true!!!
