exercise/activity:
I was all psyched to start back with my exercise routine this week. And last night, I
started feeling a little headache coming on. By this morning there was a sore throat with the headache (which had not gone away). I'm hoping to feel well enough to at least do a few upper body weight exercises tomorrow. I always feel so much better when I'm established in my exercise routine. I'm really mentally ready to get back to it, I just wish my body would get with the program...

Thanks Mags. Yeah, I sure know the drill. Thank goodness I don't have this 'stuff' as bad as DH. He's been positively miserable lately.

AM: diet soda, coffee (slept thru breakfast)
lunch: vegetable soup, All Bran crackers
snack: 2 small tangerines, yogurt, diet green tea
dinner: vegetable soup, 4 pita pitettes (3 is 1 grain serving)
dessert: 4 bites of a Reese Cup (gave the rest to DD)
PM: 1C NSA chocolate milk, 1 banana
2.5G, 2.5F, 4V, 2D
exercise/activity: I spent a little time cleaning out my closet today. I've already got a ton of jeans/jean shorts/blouses that I need to give away. And I'm nowhere near through with cleaning it out. My closet will be bare once I clean out all the clothes that are too big!!! It's a good feeling tho. I'm keeping 1 pair of my largest jeans, just as a reminder of how far I've come. I tried them on, it's both comical to see myself in them...and sad to think I was really that big. I think this 1 pair will serve as a long-term reminder of just how much I had let myself go..and that I NEVER want to go back there.

I thought I would do a comparison photo. I'll try to find a picture of me in those fat jeans and then put that same outfit on once I get to my goal weight. I guess my April, 2006 photo that I posted would do. Although, back then, I would never wear my shirt/blouse tucked in. The tshirt that I had on in that picture is now just huge. I can only wear it to sleep in. I have spent a ton on concert tshirts over the years and now they are all too big!!! DH assures me we will fix this problem over time by going to new concerts and buying new tshirts. Guess I could have worse problems..LOL!!! But really, now that I am a smaller size, I like dressing nicer most of the time.
I think you should put those old jeans on for just one photo, Joy. Once we both reach our goal weights. Then we can start a whole new thread of photos!!!

late lunch: blackened seafood platter (grouper, catfish, shrimp, wild rice, grilled
zucchini & yellow squash), 2 small bites of DD's chicken fingers, 3 sauteed mushrooms
snack: diet green tea, Starbucks skinny latte
dinner:

PM: banana peanut butter smoothie
2G, 1F, 2V, 2D (low on fruits & veggies today)
exercise/activity: shopped til I dropped (favorite local clothing store is closing on January 31st and everything was 60% off). I took this as a sign to buy some clothes that I could wear now and a few pair of jeans the next size down so I'm set with pants for a while. It was fun, but quite tiring!!! I came home with 2 large bags of clothes for only $106!!!

dinner: roast, carrots/celery/onions, mashed maple sweet potatoes
dessert: 3 pieces dk chocolate
PM: banana smoothie w/sf eggnog syrup (double dairy), 1/2 serving All Bran crackers
2.5G, 2.5F, 4V, 2D
exercise/activity: nothing today/feeling lazy & tired/PM throat is feeling sore again...oh no, here we go again...

That's great about the shopping trip!
Hey Aggie!!! Isn't buying new clothes fun??? I used to detest clothes shopping. But I told DH this evening that I am really happy with where I am right now. Not that I don't want to be smaller & fitter, but I look/feel so much better now that I did a year ago and shopping for smaller clothes is just SO much more interesting now!!!
Here's the cheesy spinach casserole you asked about. I got the recipe from Light & Tasty Magazine. We really liked this one...it's simple and delicious!!!
Cheesy Spinach Casserole
(L&T bonus book)
fixed 12/28/07
3/4 cup chopped onion
1T butter (subbed Smart Balance)
2 eggs (or equivalent eggbeaters)
1 (10oz.) package frozen chopped spinach, thawed & squeezed dry
2 cups small curd 2% cottage cheese
1 cup (4oz.) shredded rf cheddar cheese
3T ww flour
1/8t salt
In a small nonstick skillet, saute onion in butter until tender. In large bowl, combine the eggs and spinach. Stir in the cottage cheese, cheddar cheese, flour, salt and onion mixture. Pour mixture into a 1 1/2 qt. baking dish coated with nonstick cooking spray. Bake, uncovered at 350 for 50-60 minutes or until set. 6 servings.
