Hi Everyone:
I've been keeping a journal on another SB MB, but it's constantly having problems so I moved here. I'm currently entering into week 2 of Phase 1. So far things have been going well. I've been sticking to the plan and am seeing the bloating go away which is nice for some instant gratification and motivation. By default, my husband is on the diet too and is also doing really well.
I think my biggest problem so far is that I haven't been eating enough. (I NEVER thought I'd say those words!) My goal for week 2 is to make sure I'm eating enough and getting enough water.
I was out of town all day today and was faced with many challenges, but managed to actually maintain my willpower and did NOT give in to temptation!!! If you knew me, you would know this is an amazing feat! haha

A little about myself:
I'm turning 33 this month. I'm married and have an 11 month old son. I recently finished teacher's college and start student teaching on Monday which is exciting! I've tried SB a couple of times before. All of them were successful for the time that I did them, but I just didn't stick with it. My mentality has changed this time and so far, so good (although it HAS only been a week).
I look forward to getting support, advice, and offering the same to others so that we're all successful in our journeys.

Breakfast - 2 egg and cheese cups
Snack - Cheese stick
Lunch - Small caesar salad with chicken (no croutons) and a Diet Pepsi
Snack - 10 cashews
Dinner - 6 lean Italian meatballs and tomato, feta, and olives with balsamic vinegar
Dessert - Sugar-free pudding
I'm trying not to get discouraged with no weight loss the last 3 days. I had vowed that I wouldn't be a victim of the scale, but here I am weighing myself daily! I really need to work more at eating the right amounts (more than I am) and drinking enough fluid.

Today's menu:
Breakfast - 2 egg and cheese cups
Snack - V8
Lunch - French onion soup (SB friendly) with cheese (no bread) and salad
Snack - Celery sticks with Laughing Cow cheese
Dinner - Turkey vegetable soup and salad
Snack - 15 cashews
Only 5 more days on P1!

Lunch - celery with hummus, cheese, and chicken (snacky lunch)

Dinner - BBQ steak (lean cut) with asparagus and salad

Dinner we had a chicken souvlaki skewer and some greek salad.

I haven't had time to post lately, but thought I'd sneak one in. We started P2 yesterday and I weighed myself and have lost 9lbs. on P1. I was SO excited to have some fruit and yogurt today. I stayed away from bread and behaved all day because I'm going out for dinner tonight and sometimes it's hard to tell exactly what's in things.
Anyway, so far successful and I'm feeling great. I'll just keep on keepin' on.
