Friday, February 1st
We're iced in today, so I can't make it to BJ's or the grocery store like I had planned. I'm having to make do with what I have on hand (which I don't feel is a lot!).
Breakfast:
Scrambled eggs
1 slice WW toast
Coffee with skim milk
Lunch:
Big bowl of homemade vegetable soup
Cup of yogurt
Dried apricots
Afternoon Snack:
Roasted green beans
Dinner:
Taco meat and toppings
Refried beans (fat free)
Evening Snack:
Bowl of blueberries
Exercise/Activity:
None as of yet; I may get on the stationary bike later.

I spent most of the day in NYC with DH and DD, celebrating her birthday a little late.
Sunday, February 3rd
Breakfast:
MS sausage patty, 2 fried eggs, coffee with skim milk
Morning Snack:
Honeydew melon
Lunch:
Big bowl of vegetable soup
Grapes
Spelt pretzels (first time I've had these; they are great!)
Afternoon Snack:
Cup of yogurt
Cherry tomatoes
Triscuits
Dinner:
Buffalo chicken breast (made this in the crockpot with a legal wing sauce) over salad greens
Cauliflower fauxtatoes
Red pepper strips
Evening Snack:
Tangerine
Monday, February 4th
Breakfast:
Cottage cheese with SF apricot preserves
Coffee with skim milk
Morning Snack:
Dried apricots
Lunch:
FF refried beans topped with taco meat and onions
Cherry tomatoes
Cup of yogurt
Afternoon Snack:
Grapes
Triscuits
Cup of vegetable soup
Dinner:
Crab cakes
Sauteed spinach
Roasted green beans
Exercise/Activity:
30 minutes intervals on the elliptical; full body workout with weights.
Tuesday, February 5th
Breakfast:
MS sausage patty
Red pepper strips
Cup of yogurt
Coffee with skim milk
Morning Snack:
Banana
All Bran Crackers
Lunch:
Leftover crab cakes in a curry sauce
Baby carrots
Afternoon Snack:
Cup of vegetable soup
Dinner:
Chili served over barley
Grapes
Evening Snack:
SF/FF pudding made with skim milk
Exercise/Activity:
45 minutes of intervals on the elliptical (couldn't believe I actually got one for that long at the gym; it wasn't busy at all this morning)
Wednesday, February 6th
Breakfast:
3 slices Canadian Bacon
Grapes
Coffee with skim milk
Morning Snack:
Starbucks skinny latte
Pecans
Lunch:
Chili over cauliflower fauxtatoes (chili included my bean serving for the day)
Red pepper strips
Afternoon Snack:
Banana
Triscuits
Dinner:
Chicken and ham lasagna
Salad
Evening Snack:
Grapes
Exercise/Activity:
60 minute body sculpt class, followed by 30 minutes on the elliptical
Thursday, February 7th
Breakfast:
Sauteed spaghetti squash, onion, tomatoes, mozzarella
Friday, February 8th
Breakfast:
1 slice WW toast, 2 fried eggs
Banana
Coffee with skim milk
Morning Snack:
Red pepper strips and baby carrots
SF/FF latte
Lunch:
Tuna salad
a few more baby carrots
Afternoon Snack:
Grapes
Dinner:
Egg drop soup with lots of spinach
3 of DS' chicken nuggets (not legal)
Evening Treat:
Probably a glass of red wine; my in-laws are coming in around 9:00 so I think I'll need one!
Exercise/Activity:
Ran errands until 2:00 today; I'm not sure if anything formal will happen other than bringing around firewood, which is quite a bit of work.
Saturday, February 9th
Breakfast:
WW bluebery bagel, 2 chicken breakfast sausages
Coffee with skim milk
Morning Snack:
Banana
Lunch:
Grilled provolone cheese sandwich on WW bread
Cup of split pea soup
Lots of red pepper and cucumber slices dipped in ranch
Dinner:
Restaurant meal - Eggplant Tower (about 4 slices of grilled eggplant with caramelized onions and goat cheese, and a roasted red pepper sauce - yum!)
Side salad with balsamic dressing
Evening Snack:
Grapes (and I'm sure I'll have a glass of red wine)
Exercise/Activity:
Roller skating (!).
Sunday, February 10th
Breakfast:
WW mini bagel topped with 2 slices Canadian Bacon and ½ slice chipotle cheddar cheese
Banana
Coffee with skim milk
Lunch:
Bowl of split pea soup
Grapes
Afternoon Snack:
Yogurt
Roasted green beans
Dinner:
Rebekah's baked spaghetti dish
Vegetable soup
Evening Snack:
Grapes
Exercise/Activity:
I don't think it's going to happen today.
