If you are sick of ricotta like I am, I found a new desert that I made last night and it was pretty good.

Peanut Butter Yogurt Dessert

2 tablespoons natural crunchy peanut butter

1 cup plain yogurt

1/2 teaspoon vanilla extract

3 packets Splenda (or to taste)

Mix and chill. This has the “bite” of yogurt, the crunch of peanuts, and the creaminess of ice cream.

I tried this tonight and it is really good! I am one of those that just can't stand the ricotta desserts and this hit the spot.

Anyone tried this with cocoa? I wanted to try it but was too chicken! LOL! :) Didn't want to ruin the whole thing.

You'll love this.........I was making this dessert and sprinkling in my splenda - so I thought - tasted it and it was AWFUL! Ok, needs more splenda, I then saw I was sprinkling in baby rice cereal! I didn't want to waste it so I then got the splenda and put some in and ate it all. I'm sure the rice cereal was a no no. Next time I'm going to make sure I have the splenda.

This recipe is AMAZING!! I tried it b/c I dont like chocolate flavored deserts, and didn't want to try the ricotta and I was so surprised! I made some for myself, but had to make another desert b/c my DH wouldn't stop eating it! Thank you SO MUCH for sharing this recipe!

Oh my goodness, YUM!

My stomach is all flip-floppy today because I have an exam, and often when I am feeling iffy, eggs are the last thing I want to see. So I made this dessert as a replacement. I used vanilla yogurt since I didn't have plain and creamy natural PB since I'm not a big fan of crunchy.

SO CREAMY AND YUMMY!!!!!!!!!! This is AWESOME!

Thanks for your reply! Just a couple more questions re this: 1) does this have to be counted toward the 75 sweet treat calories? Or is it dairy and nuts? 2) how many servings does this recipe yield? Is it just for one?

You are absolutely right - it counts towards your 2 cups of dairy and your nut serving for the day.
