If you are sick of ricotta like I am, I found a new desert that I made last night and it was pretty good.

Peanut Butter Yogurt Dessert

2 tablespoons natural crunchy peanut butter

1 cup plain yogurt

1/2 teaspoon vanilla extract

3 packets Splenda (or to taste)

Mix and chill. This has the “bite” of yogurt, the crunch of peanuts, and the creaminess of ice cream.

I just wanted to add my "endorsement" to this recipe as well. It's SO YUMMY! It tastes so good, and it's also filling and satisfying. LOVE IT.

I tried this tonight with my ricotta cream and creamy peanut butter, 2 packs of splenda. Very good! I may try it in the morning with yogurt.

This was really good! I had it for breakfast and it was very filling. I used dannon light vanilla and a half packet of sweet n low and it was perfect.

I just 1/2'ed this recipe and used it as a veggie dip. Yum!! I also had ds (3 yo) try it on his pretzels. First he said it was just ok, but then he asked for more!

YAY, Susan, that sounds SO GOOD. I already think it tastes like peanut butter ice cream... Now I have to try FREEZING it to make the experience more real!!!

Someone at my internship started SBD yesterday, so she pulled me into her office for like an hour and asked me all these questions about SBD. (She mentioned something about not eating sugar, and I said she should try SBD, and she said, "I'm on Day 2 of Phase 1!") She and her husband are doing it together, and I showed this board and said she could always find answers, ideas, recipes, and PLENTY of support here. I'm so glad to have gotten someone on board here! Let's see if she just lurks or starts posting :)
