Spinach Casserole (WW recipe)

This is an old Weight Watcher's recipe that my husband and I have always liked.  I actually brought to a Thanksgiving dinner as a side and it was a big hit.


Spinach Casserole - 2pts
2 pkgs frozen chopped spinach
2 cups fat free cottage cheese
1/2 cup egg substitute (equal to 2 eggs)
1/2 cup fat free parmesan cheese
Optional: 2 cups sliced mushrooms


Cook spinach until heated through (microwave).  Drain very thoroughly, pressing into a colander or squeezing out the excess water. 


(Optional: Sauté mushrooms using cooking spray and/or butter spray.)


Combine the cottage cheese, egg substitute, and parmesan cheese in bowl. Mix in spinach.


Pour into a 9 inch pie pan or into 6 individual baking dishes which have been sprayed with nonstick spray. Sprinkle casserole with a little parmesan and paprika.


Bake at 375* for 25 to 30 minutes, or until firm and lightly browned at the edges.


Serves 6 / 2 points per serving


 


NOTE: You can freeze individual servings of this casserole and reheat it in the microwave.

Hi Susan,

We had this last night and it was fabulous! Very tasty and also quite filling. I used the Southwestern egg beaters in it - instant spice! This goes in my Favorite Veggies file!

Susan, could you substitute LF Ricotta for the cottage cheese? I'm out of cottage cheese and can't run to the store today....I would love to serve this with your Chicken Cacciatore that's in my crock pot!
