Good friends of ours once gave us a recipe for what their kids had named "the good rice". Very yummy. I adapted it to work with SB P2 (brown instead of white rice, olive oil--and less of it--instead of butter, etc). It has the creamy consistency of risotto without any of the effort.

Turn oven to 350 degrees.

In oven-proof pot or casserole with lid put:

1 c brown rice

2 cans fat-free broth (chicken or beef, veggie if it doesn't have added sugar)

~2 Tbs olive oil

Cover. Bake for approximately one hour. If the rice is done but there is still liquid, remove cover and bake off the rest of the liquid.

This was good, thanks for posting it. We had it tonight with stir fry vegies and peppered pork tenderloin. I tried susan's recipe before and half my rice was crunchy.

This was creamy-ish - my son and husband also liked it.
