Let's infuse some new ideas into our summer salad menus!

Now that barbeque season is here, what are your favorite salads? Is it a side dish or a main dish? Can you adapt an old stand-by to be SBD friendly?

Let's see if we can gather a bunch of ideas here that we can go back to all summer!! I'll be gathering mine, and posting them here later today!

CUCUMBER & ONION SALAD (P2)

1 seedless (english) cucumber {or regular cucumber, seeded)

1 onion (red or white)

2 - 3 Tbs. fresh dill weed, chopped

1/3 c. low fat sour cream

2 tsp. lemon juice

salt and pepper

Slice cucumber VERY thinly and place in colander. Sprinkle with salt and allow cucumber to sweat out its moisture for about 20 minutes. Rinse, drain and dry cucumbers. Slice onion VERY thinly. Mix sour cream and lemon juice together. Toss sour cream mixture with cucumber and onion. Sprinkle dill, salt and pepper. Refrigerate.



TABOULEH SALAD (P2)

1 box tabouleh, prepared

Assorted diced fresh vegetables (red pepper, radish, cucumber, onion, etc.)

Mix together, add your own vinaigrette. Serve chilled.




BARLEY SALAD (P2)

Prepare barley, bring to room temperature.

Finely dice assorted roasted veggies (If I didn't plan ahead, I buy them at the salad bar - roasted yellow squash, zucchini, eggplant, red pepper, red onion, etc.)

Mix together, add your own vinaigrette (I use red wine vinegar with this one). Serve chilled.

My favorite is:

All Phases:

Brocolli crowns cut up into bite size pieces

Crumbled turkey bacon

Mayo

Mix and chill- or okay to eat right away

I've used the jar real bacon when in a hurry- but that's not SBD.

And when I wash the brocolli I do it right before mixing this all together- so that the brocolli has a bit of water still on it and then the mayo is stretched a bit further- for best SBD keep the mayo as low as you can.

I'm always asked to bring this!

Thought I would bump this up and add my new favorite recipe.


I make bean salad as a side dish for dinner and the next day I add either leftover grilled steak or chicken, or some canned chicken or tuna. It is SO easy! Here is how I make the bean salad:


1 can chick peas


1 can kidney beans


1 can green beans


1 can quartered artichokes


chopped green olives


1/2 onion diced


I combine all of these ingredients and add olive oil, vinegar, garlic powder, salt an pepper.
