Pork Loin Roast with Dijon Glaze

This is a yummy recipe that I made yesterday. Actually, it's the second time I've made it and it's turned out both times.

Pork Loin Roast with Dijon Glaze

2 lb pork loin roast (boneless with all fat trimed)

Glaze

2 Tbsp. dijon mustard

1 Tbsp. light mayo

1 tsp. thyme

1/2 tsp. salt

1/4 tsp. pepper

Mix all glaze ingredients together in a bowl. Spread completely over the pork loin roast. Place roast in a roasting pan that has been sprayed with Pam. Roast at 325 degrees for about 2 hours. I usually put 1/2 cup of water in the pan at about 1 hour into the cooking, so that the juices don't burn on the bottom of the pan.

Remove from oven and let rest for about 10-15 minutes. Enjoy.
