Taco Meatballs

These are great and the kids love them.
Taco Meatballs
1 1/2 pounds ground beef
1 pkg. taco mix
1 green onion (scallion), chopped
2 eggs
1 minced garlic clove
1 block reduced fat sharp cheddar, cut in cubes
Preheat oven to 425.
Beat egg and mix all ingredients except cheese together. Mold a heaping tablespoons of meat around a cube of cheese. Repeat with all meat. Place on a cookie sheet sprayed with Pam and bake about 10 minutes until meat is done and cheese is melted.
I serve them with black beans, sour cream and salsa!

Thank you for bumping this up! These sound really good and easy too. I think my kids are really gonna like them! So I have Rotisserie chicken for Sunday, and Taco meatballs for Saturday! Yeah!!! Weekend
