These are great and the kids love them.


Taco Meatballs


1 1/2 pounds ground beef
1 pkg. taco mix
1 green onion (scallion), chopped
2 eggs
1 minced garlic clove
1 block reduced fat sharp cheddar, cut in cubes


Preheat oven to 425.


Beat egg and mix all ingredients except cheese together.  Mold a heaping tablespoons of meat around a cube of cheese.  Repeat with all meat.  Place on a cookie sheet sprayed with Pam and bake about 10 minutes until meat is done and cheese is melted.


I serve them with black beans, sour cream and salsa!

Made these last night and it was a hit! My kids loved them, and so did DH! I used "Laura's lean meats" for mine and I served them with kidney beans, tomatoes and salad. A very yummy meal that will make another appearance at my house!

Had these last night for dinner and both DH and I loved them!! Served them with black beans, guacamole, sour cream, salsa and a salad. Definitely will be making them again. Thanks for posting this.

I made these this weekend and used some ground deer meat. They were very good. The cheese ran out around them on the pan a little but we just scooped it up and ate it with the meat ball. I used Kraft 2% colby and cheddar mixed cubes that were about the size you said Susan, maybe just a little bigger.

I made these with ground turkey this weekend, and the cheese also ran out though I didn't see any openings in my meatballs!
