These are great and the kids love them.


Taco Meatballs


1 1/2 pounds ground beef
1 pkg. taco mix
1 green onion (scallion), chopped
2 eggs
1 minced garlic clove
1 block reduced fat sharp cheddar, cut in cubes


Preheat oven to 425.


Beat egg and mix all ingredients except cheese together.  Mold a heaping tablespoons of meat around a cube of cheese.  Repeat with all meat.  Place on a cookie sheet sprayed with Pam and bake about 10 minutes until meat is done and cheese is melted.


I serve them with black beans, sour cream and salsa!

We've made these twice now. DH loves em.
We have Refried beans, and salad, and Salsa with it. mmmmmmmm

I do think that they can stall you If you arent careful on your portions!
I dont use much cheese in the balls, and we used 4% ground sirloin.
But I noticed i havent lost the weight I gained from eating yesterday.
however it could be retention again!


But these are sooooooooooooooooooooooo good.


I use 1.3lbs of 4% fat Ground Sirloin or Diet Lean Beef.
1 egg,
1 Packet of Taco Seasoning.
Mix it together (like meatloaf)


wad the balls, and open a spot and put the diced peices of chesse in the middle.
Roll them up in a ball (rolling rolling rolling) :-)
place on a Cookie sheet.

I baked at 425° for 12-15mins!
Cheese might Goo-out!

These are so wonderful. I made them small and served them to my Bible study group. Because I was short on time, I just mixed 2 cups of grated cheese with the meat mixture, then I scooped the meatballs onto a cookie sheet and baked. They were a hit, along with our other finger foods and it gave me plenty to snack on without being tempted by the chips and salsa. :)

I was thinking of making these tonight but I don't want to go to the store. I don't have a green onion. Do you think I could saute some regular onions to use? Also, how about using velvetta cheese in the center?

I think both substitutions would be fine.

The sauteed onion would probably be fine (or even chop it fine and just mix it in without cooking it).

I made those two exact subtitutions when I made mine!
It was fine. The cheese did melt, but I figured it would, so I lined my baking sheet with foil and some of the cheese did ooze out, but it wasn't so bad.
