Has anyone made real SB friendly cookies in Phase 2 or 3? As in chocolate-chip or oatmeal? If so, I would love the recipe!

Hi Holli,

I make oatmeal chocolate chip cookies. I keep them in the freezer (to avoid too much temptation), but have them as a guiltless treat sometimes at night with a cup of green tea. Makes me feel good.

Here is the recipe:

Oatmeal Chocolate Chip Cookies

1 C land-o-lakes soft baking butter

1 C splenda

2 eggs

1 t vanilla

1 c oat flour

½ cup whole wheat flour

1 t cinnamon

½ t nutmeg

½ t sale

3 c whole grain oats

1 c semi-sweet mini chocolate morsels

Preheat oven to 350

Beat together butter and splenda until creamy

Add eggs and vanilla – set aside

Combine oat flour, whole wheat flour, baking soda, cinnamon, netmeg, and salt together – add to butter mixture – mix well

Stir in oats and chips – mix well

With hands, roll rounded teaspoons and drop and flatten onto parchment paper lined cookie sheet, bake for 10-12 minutes

Cool on paper towels


BTW, I made these to serve with dessert on Easter. My non-SBD family members described them as doggie biscuits! But we SBD-ers have a more refined palate attained from eating whole foods!!! LOL!!! Try them.....

Thanks for the recipe, Karen, but I have a couple of questions for you...

Where can I find oat flour? Is it only available in health food stores? I didn't see it at the grocery store.

Is the Land O'Lakes you use real butter, or a type of margarine? We don't have Land O'Lakes here in Canada, so I'm going to have to substitute.

For oat flour you can take regular long-cooking oatmeal and grind it up in a food processor. I used Smart Balance - the SBD recommended butter substitute. SOrry I forgot to mention that in the recipe.

Hi Karen,

I made your cookies, and they are fantastic! Both I and my cookie monster boyfriend love them. Thank you so much for your recipe. I did add baking soda, since it's usually included in cookie recipes, but I don't think it made much of a difference either way.
