Hard time eating veggies? Try this!

My DH is not a veggie fan, but I made a big batch of them this way and he fills up on them! Find whatever veggies you ejoy most - we use broccoli, sqaush, red and green peppers, onions, and green beans.

Preheat oven to 450 degrees, and then cut all up your veggies into nice size pieces.

Place veggies in baking dish, mix in fresh minced garlic, olive oil (however much of each you want is up to you, I usually use 4 cloves of garlic, and 1/4 cup of olive oil) and add 1 packet of onion soup mix.

Roll up your sleeves, and mix the veggies in the oil, garlic and soup mix

Cover and cook for 45 min to an hour, and voila! They're so yummy, and have so much more flavor than just plain steamed veggies. (We make this with grilled chicken - marianted in Paul Newman's Light Vinagrette - the best marianade I've ever tried! I highly recommend it!)

Hi Candace,

I really hate to tell you this, but most onion soup mixes are a no-no on SB because of the trans-fat. Check the label for "hydrogenated" or "partially hydrogenated" oil of any kind.

I had to throw out all of mine. :(

Mine's okay - I get it from a health food store (My aunt got me hooked on it!). I guess I was lucky, b/c I didn't realize some brands have Hyd. Oils. Man they put that stuff in everything! The brand I use is Arnolds Valley Onion Soup Mix - no trans fat or hyr. oils! (but thanks for letting me know anyways!)

love your idea. I will surely make it - but as barely says, I shall be careful of the kind of Onion soup. Perhaps I can sub this with spice salts and rubs... and a dash of olive oil!!! sure sounds yummy, and easy to re-heat when cooking for one... :) thanks of the idea, love veggies, but hate to cook them!!!
