Gulf Coast Shrimp Spread -so good!

Gulf Coast Shrimp Spread - 2 TBS/1 Pt


2 quarts water


1 & 1/4 pounds raw shrimp, unpeeled (can use cooked)


1 large shallot, peeled & quartered (use less than add to taste)


1 & 1/4 cups low fat sour cream


1/2 tsp.. salt


1/2 tsp.. pepper


1/2 tsp.. grated lemon rind


1 Tbs. fresh lemon juice


1/4 tsp.. hot sauce


 


Bring water to boil in large saucepan; add shrimp, cook 3-5 minutes. Drain well, rinse with cold water & let cool. Peel & devein shrimp; set aside.  With food processor on, drop shallot through food chute. Process until finely chopped. Add shrimp to processor; pulse 10 times or until shrimp is finely chopped.  Combine shrimp mixture & remaining ingredients in a bowl; stir well.  Cover & chill.


 


Makes: 3 cups / serving size: 2 Tbs.


Serve with pumpernickle bread or WASA crackers. *wink*  Or veggies if in phase 1, would be YUMMY on top of salad!
