Just wanted to share--

You know how it is on Sunday night -- you want some quick comfort food without a lot of fuss. Here's my creation from last night:

Take 2 whole wheat wraps.

Spread each with low carb pasta sauce & some sliced tomatoes.

Top with minced garlic, a few dabs of pesto, and dried oregano.

Top all with LF grated mozzarella. (I bet some ricotta would be good, too).

Bake about 10-15 minutes in hot oven (about 425) watching till bubbly and brown arund edges.

We had this with spinach salad (brown chopped turkey bacon & garlic & almonds in some olive oil, toss in with baby spinach , balsamic vinegar, and a chopped pear).

I tried this tonight and it was wonderful. I added a few veggies and a couple of slices of turkey pepperoni. Even my son like it! It was quick for a Monday night...thanks!

I'm glad for the feedback. I, too, thought it was good, and frankly, I was discouraged that no one replied about it. Pretty soon, my post would have disappeared forever into the archives! So you and I can enjoy this secret recipe!

Hey!

I'm glad it didn't disappear in the archives! The pizza sounds great and so does the salad. They both sound like something I would have made pre-SBD! It's so nice that we can still eat "real" food, isn't it?

No, you and I are recipe buddies! In fact, I think the spinach salad was originally posted by you. I don't know what I would do without the packages of pre-washed baby spinach. I could easily go through one of those a day. Have a great day!

Yes, the baby spinach is so much nicer than regular spinach. I now buy the HUGE package at Costco. It's kind of a challenge using it up, but when it starts to lose its freshness, I do a big sautee and save it for omelets.

I also love english cucumbers (they are the 'burpless', seedless ones). I get these at Costco as well - 3 in a pack.

That's ironic. . .I originally bought it just for breakfast eggs, and have since expanded to using it in salads or creamed as in the original book (love that!) I bet it would also be good ON the pizza!

Thanks! If you cook it a while it comes out crispy, sort of like Pizza Hut thin crust (or whatever it's called).
