My husband and I are both on SBD, he eats meat and I don't. Last night I made him the taco meatball recipe that I saw on this board and they smelled so good, that I tried to make some that I could eat and they turned out wonderful!

Vegetarian Taco "Meatball"

2 cans black beans (drained and rinsed)

1 pkg. taco mix (make sure to read ingredients, some have sugar)

1 green onion (scallion), chopped

1 egg

1 minced garlic clove

1 block reduced fat sharp cheddar, cut in cubes

Preheat oven to 425.

In a food processor process beans until smooth, mix all ingredients except cheese together.  Mold a heaping tablespoons of bean mixture around a cube of cheese.  Repeat with all beans.  Place on a cookie sheet sprayed with Pam and bake about 10 minutes until cheese is melted.

I served with zucchini, sour cream and salsa!

These sounds really yummy, but just one question - how do you keep the bean mixture on the cheese cube? I'm trying to imagine it and it seems like it would fall off! I do want to try these - I only eat meat a few times a week, so most of my meals are meatless and this would be a great addition.

I'm sorry, I guess I should have explained this better. I didn't process the beans until they were runny just kind of mashed. It didn't make as nice of a ball as the meat but it did stay around the cheese, it was just a little flatter. After it was cooked it stayed together, probably because of the egg. You might want to try using 2 eggs, I didn't because I don't like the egg taste, but next time I might try.
