Roasted Vegetables. I never made them the first time I did SBD. But, made them a few nights ago and I've been eating them every since. Made some last night for dinner with steak and prawns, had the leftovers for lunch today, and made a fresh batch tonight for dinner. I threw in some curry powder in tonights batch and had a couple of tablespoons of tzatziki to dip them in!! Delicious!

Hi Cathy,

I've been using cauliflower, broccoli, zucchini, a carrot (I'm on Phase II and only have a couple of pieces), red and yellow peppers, asparagus and fresh green beans. I just cut the broccoli and cauliflower into flowerettes and slice the zucchini and carrot diagonally so the pieces are quiet large. It's amazing the roasting brings out the natural sweetness of the peppers and carrots.

What temperature and for how long do you roast the vegies. Do you spray with olive oil before roasting? What seasonings do you use?

Hi Karen,

I've been roasting them at 375 convection for about 20 minutes.

I use about 2 tablespoons of olive oil, 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp black pepper and 1/2 tsp salt and mix everything up really well in a bowl then turn it out into the roasting pan.

I don't see why you couldn't use olive oil spray.

For the curried veggies I used about 1-2 tablespoons of curry powder.
