Ok everyone, I seem to be having the same thing every night for dinner and I'm afraid I'm going to burn out on grilled meat (chicken, steak, pork) and oven roasted veggies, even though I love them!  It's time for some other ideas so I turn to you!  ( :


What is one of your favorite SBD dinners?   And if you would be so kind as to include the recipe too that would be wonderful!  I'd love to have some new ideas for dinner!

No recipe but I have fallen in love with a plain grilled sirloin buger, Sweet potato french fries and fried zuchini!! In the sbc there is a recipe for "hamburgers" so I just do a cajun seasoned plain sirloin burger. Then you cut the sweet potato in to french fries and bake in the oven. I found the recipe here. Then the only way I've ever been able to get the boys to eat zuckini is to fry it. But I did it SB style. I lightly salted the zucks after I cut them in to slices. That is to bring out the water. Then season ww flour with black peper, dip the zucks in the flour and shake off excess. Then heat EVOO (extra virgin Olive Oil) in a pan. Fry on both sides. Yummy!!

Here are some recent Phase 2 menus and info about recipes (sorry they're approximate -- it's how I cook most of the time). This is an approximation of our past week. The chicken and meatloaf lasted for 2 meals each.

Crock Pot Italian chicken: Place chicken breasts in crock pot, top with jar of SBD-friendly pasta sauce (I like Emeril's). Cook all day on low. Put over some ww pasta.

Serve with steamed string beans or summer squash or sauteed julienned zucchini & sliced vidalia onions. Chocolate/cinnamon ricotta cream for dessert.

Turkey burgers (bought ground turkey meat, stirred in some store-bought pesto)

Hash brown zucchini (search this website for recipe)

Black beans (the Oprah recipe, also from this website--I added chopped mild jalapeno)

You can cook burgers and zucchini on same grill -- burgers will take longer since you have to cook them all the way through.

Salad: Boston lettuce with oven-toasted pinenuts, or just pecan halves. Sprinkle with balsamic vinegar & olive oil -- no need to make vinaigrette!


Meatloaf -- soak some ww breadcrumbs in skim milk, add 1 egg, then mix in lean beef, chopped fresh thyme, chopped vidalia onions, s & p. Form into loaf and top with sauce made from 1 can of low sugar tomato paste, red wine, and some splenda. Bake loaf for about 45 mins in 350 oven.

Roasted Asparagus with pinenuts (from this website)

Sweet potato oven fries (recipe from this website. Put in oven at same time as meatloaf.


Eggplant Rolatini (from this website)

Tossed salad

Dessert:

Strawberry Cheese Pie - found recipe on AOL & adapted it

For crust -- mixed some oatmeal, smart balance, splenda & vanilla; pressed into pie dish & baked 10 mins at 350. then let it cool.

For filling -- whipped together some FF cream cheese, vanilla & almond extract & splenda -- might be better with LF cream cheese, or if you add some light redi whip

Topped with some crushed strawberries & also some whole strawberries standing on end

I love the SBD salmon patties with curry sauce, roasted broccoli, the roasted eggplant and red peppers, the grilled salmon with rosemary.
