1. Tuna Macaroni Salad (P2)
Cook some whole wheat macaroni or similar pasta
Mix in 2 cans of tuna, drained
Add some light Hellmann's mayo
Can add some (vidalia) onion, chopped, for extra kick
Also salt & pepper
Refrigerate till nice & cold.
2. Cucumber Salad
Marinate sliced cucumber, sliced vidalia onion in
Mix of Vinegar & Olive Oil & Some Splenda, salt & pepper.
Marinate it at least overnight.
3. Tomato Salad
Slice some nice juicy tomatoes onto platter.
Sprinkle some good balsamic vinegar & extra virgin olive oil on top.
Snip some fresh basil on top, and also add 1-2 cloves of finely minced garlic, plus salt & pepper.
Let marinate at least an hour at room temperature.
4. Curried Chicken Salad
Cube some cooked, cold chicken breasts.
Add light mayo and a sprinkling of curry (to taste).
Add some fresh lemon juice -- about 1 lemon
For an extra touch, add some halved seedless grapes (I haven't re-introduced them yet but I think they're legal in Phase 2)
Chill well.
This makes a really nice dish to bring to concerts or plays in the park, or just plain old picnics!
