Converted my shrimp scampi recipe to be SBD-friendly - it was delicious! It is Phase 2 due to the addition of wine, but it can be omitted for Phase 1.

SHRIMP & SPINACH SCAMPI

1 lb. shrimp, cleaned

1 bag baby spinach

juice of 1/2 lemon

1/4 c Smart Balance spread

2 cloves garlic, minced

1/8 tsp cayenne pepper

1/4 tsp salt

1 tsp. olive oil

1/3 cup dry white wine

1/4 cup pignoli nuts, toasted

1/3 cup sun-dried tomatoes

Add olive oil to pre-heated pan. Over medium heat, cook garlic gently for 2 minutes. Add shrimp and cook until they are all almost pink, stirring frequently. Add wine, let cook for 2 minutes. Add lemon and butter spread. Put entire bag of spinach in pan, along with salt and cayenne. Using tongs, turn spinach over frequently until it just starts wilting. Add pignolis and tomatoes.

You are probably right, Susan, but in keeping with the guidelines for recipes in the book, I thought I should say phase 2.
