RECIPE CHALLENGE

Over the next week, I challenge each and every one of us to dig thru the recipe archives here, make an old favorite or try a new recipe, and bump it up to the top with a review.

An earlier post today about SBD pizza reminded me how quickly our wonderful recipes get buried.

Let's put some new life into some of the older recipes!!

Thanks, Karen--great idea.

I spent a couple hours yesterday sorting through all my SBD recipes that I've printed from this website and others.

I just posted some of my favorite veggie recipe ideas. And I forgot what we enjoyed so much last night! Black Beans from karensue2021.

I take your challenge and accept it :-)

An Italian favorite is ricotta pie so I am going to make the post for spinach ricotta pie this week. Here is the post by glsh7 on April 26

"Spinach Ricotta Pie

1/3 c olive oil

1 lg onion -- thinly sliced

1 lb spinach cut into ribbons and thoroughly dried

1 1/2 c ricotta cheese

4 eggs

1 c feta cheese -- crumbled

1 T dried oregano

salt & pepper to taste

1. Preheat oven to 375

2. Heat oil in a heavy pot over high heat

3. Add onions and saute until translucent -- about 3 min.

4. Add spinach in batches if necessary -- saute until just wilted.

5. Lightly beat the ricotta and eggs together in a bowl.

6. Add the spinach mixture, feta, oregano and salt and pepper

7. Mix thoroughly.

8. Pour into a greased 9x13 pan

9. Bake for about 40 min. until the top is lightly browned.

10. Serve warm or at room temp. "

I am going to make a few adjustments to the recipe to make it more to my liking but the base is still the same. Instead of spinach I am using asparagus and broccoli. I am also going to add some ham for extra protein and sub out the feta and onion (don't like them). I will add some garlic and maybe another meat inorder to make it more of what I am use to around the holidays.
