My dh and I are finally losing weight again!

My strategy?

At least 2 veggie dishes each evening to go with our meat.

Some recipes I've tried that we both love (they're all available on these boards and in the SBD original book)

Creamed spinach (so easy, and scrumptious)

Roasted Asparagus with Pine nuts from daily dish (can omit the balsamic --just roasting with shallots and adding pine nuts make it great)

Zucchini hash browns (yum!!!) or also simply sauteed with onions

Yellow Squash casserole

Broiled tomatoes with pesto (buy pesto already made to save time)

Cucumber & Onion salad (I think it's from WW -- marinate--for several hours or overnight-- sliced cucumbers & vidalia in apple cider vinegar & olive oil, add some splenda) -- eat it nice & cold!

Tomato salad (sliced, with balsamic, some garlic, snipped basil, olive oil, salt & pepper)

Spinach salad (it's wonderful, especially with P2 pear & toasted almonds or pine nuts -- use balsamic vinaigrette you whip up from scratch)

And don't forget the easy roasted eggplant & red pepper--it's a winner, and low maintenance to prepare!

Tonight I'm planning Eggplant Rolatini!

My husband told me last night he really likes eating this way -- when you fill up on vegetables, you feel good. No need for rice or carbs. And they taste so great!

So everyone get out and load up your vegetable drawers this weekend!

I forgot-- two more favorites to add (thanks to the posters from this board!!!) These are both great.

I love the Kale Chips! Sometimes you just need something crunchy when your supply of nuts is still calling out at you!

I always have loved vegies and I totally agree with you! I never could eat all of them though because of my sensitive stomach UNTIL....I started taking my fiber drink (sugar free of course) before my meals and since then NOTHING upsets my stomach anymore! This is so awesome! I can eat broc. and cauli. again! But my all time fav will always be spinach...yum yum! Hey, dh is the cook in our house and he always sautes vegies and sweet pot. in olive oil....this is SO good!

Grilled foods are one of the BEST parts of summer, especially the veggies!!!!

Speaking of veggies, last night my goal was to clean out the cabinet/fridge while making a delicious vegetable dish to jazz up our dinner.

I used the black bean recipe from this site (the Oprah one) and added the rest of frozen mixed vegetables taking up freezer space. I was also able to use up the bits of peppers and onions I had in the vegetable drawer. I also threw in some chopped celery. It was the perfect accompaniment to our burgers!

I went to a barbecue this weekend and offered to bring a side dish. I made couscous and piled it in the center of a platter and placed assorted grilled veggies around the side. It was a big hit.

Plus, I made so many veggies, that I have lots of leftovers for omelets, side dishes, etc. for the week ahead. I grilled 2 eggplants, 3 zucchinis, 3 yellow squash, 2 onions, a bunch of asparagus, 2 red peppers. This made lots of veggies!!

This sounds too good! I'm sure it was a big hit.

I used to work in catering, and grilled vegetables were a best seller and so easy to make!

The last two nights, I also made grilled vegetables. I marinate mine in olive oil & balsamic vinegar, with some salt and pepper.

Yellow squash are yummy, red peppers turn so nice and sweet (they go for a while. . .) and eggplant was out of this world. I will be grilling veggies all summer -- so nice to not heat up the kitchen with the oven!
