Someone mentioned fat-free half and half. In what phases can it be used and where can I find it here in CA? Thanks. (If half and half is half cream and half milk, how can you have cream with no fat?)

There is at least one recipe in P1 that calls for Land O'Lakes fat free half and half. It's the Surprise Mashed Potatoes (pureed cauliflower with butter spray and the half and half). That being said, I guess it is acceptable for use in all phases, though I'm not sure about the quantities. I have read that some people have trouble finding it...I got it at my local HEB. I live in Texas. Hope that helps!

I was under the impression that half and half refers to the cream content as well.. Recently the toronto star ( my local newspaper) did an article on SBD and pooh poohed fat free h/h as a myth.

At least in Canada it is. Try evaporated skim milk instead.

I don't know how they do it - but Land o' Lakes makes Fat-free Half & Half.
