Cherry Snapper Ceviche (P1)

(recipe found on page 139 of the original book)
I would have marinated the fish for longer than 3 hours in order for it to be opaque all the way through.
Substitutions to the recipe:
- Vietnamese sriracha hot sauce instead of sambal oelek
- omitted Spanish onion (not a fan of raw onion breath)
- extra cilantro added (LURVE cilantro)
Be sure to use very fresh fish as it is not cooked!
Will definitely make again - perfect for a light summer dinner!
