Need help with grilled veggies!!!

I thought I was a pretty good cook..but I have tried to grill and roast veggies both in my oven and on the grill....they turn out terrible. The other day I roasted onions (that's the only thing that turns out good) yellow bell peppers (they turned to mush) asparagus, and green bell peppers (tasted burnt). My oven was 450 degrees and I left them in for 20 minutes.....checking them at 10. Oh, I brushed them with a little olive oil and sprinkled spices.....what am I doing wrong?

For most veggies start checking after 15 minutes or reduce oven to 400.... It sounds like you overcooked them.

It does sound like you have your oven on too high. 400 should be fine.

When my husband grills them, he uses a charcoal grill, he only puts them on the direct heat to make the pretty lines on them and then moves them over. It takes about 15 min depending on how high your coals are. They are great. They don't need to be directly over the fire to get that great smoky taste!

The book DOES say to use 450 degrees, which is a little too hot I think. The veggies will be done in 10 minutes if you use that temperature. Some people like the veggies lightly cooked, I like them with actual brown grilly marks on them.

Also, don't skimp on the oil.
