ISO terrific potluck/buffet recipe!

Next week will be my turn to provide the main dish at our church's young parents fellowship meeting and I have no idea what to prepare!  I've looked at several sources (online and the new cookbook) but nothing jumps out at me.  Well, I thought of chili but who wants to eat that in the warmth of late May?  ;)  Anyone want to share any ideas that would appeal to a group of mostly non-SBDers?  They like to do themes like Mexican or Italian, I have to tell them tonight so others can plan around it for next week.  We are having enchiladas tonight which I guess I will not eat - I am having plateau issues - and I am making the Oprah's black bean side posted here.


Thanks for sharing any inspiration you might have.

What about the crock pot pulled pork? Crock pot would be easy to bring, and you can serve tacos along side, with sour cream & guacamole & shredded lettuce. It's the mexican theme you suggested and very tasty/easy to prepare.

The salsa chicken sounded good, too -- same idea, but I haven't tried it yet.
