Vanilla Pudding with Strawberries






serves 1

Ingredients
1/2 cup fat-free, sugar-free vanilla pudding
3-4 strawberry slices

Fresh Strawberries and Blueberries in Chocolate Cups






Serves 8

Ingredients
4 cups strawberries
4 cups blueberries

Chocolate Cups:
1 package (3 1⁄2 ounces) vanilla-flavored sugar-free vanilla pudding mix
1 1⁄4 cups fat-free milk
3⁄4 cup fat-free frozen whipped topping, thawed
8 Astor Chocolate Liqueur Cups (available at liquor stores)
Cocoa powder

Instructions
To make the chocolate cups: Prepare the pudding using 1 1⁄4 cups of the milk. With a rubber spatula, fold in the whipped topping. Spoon the cream filling into the chocolate cups.

Add equal amounts of berries to each cup. Sprinkle with cocoa powder.

Strawberry Buttermilk Ice






Serves 2

Ingredients
Is there anyone who doesn’t like something smooth and cold on a warm evening?

1/2 cup sugar substitute
1/2 cup water
1 1/4 cups quartered strawberries (about 1 1/2 cups whole berries)
1/2 cup buttermilk



Instructions
In a large bowl, combine the sugar substitute and water. In a blender or food processor, blend the strawberries until smooth. Add the strawberries and buttermilk to the sugar substitute mixture and stir until well-combined. Pour into a freezer-safe container. Freeze overnight. Remove from the freezer 30 minutes before serving.
