this is a SB friendly version of a favorite dessert of ours. I made it for a dinner party we had, I wanted a nice dessert that wouldn't be too bad on the diet. We served 6 adults and even with second helpings there was still over 1/2 left so it will easily serve 12-15.

Ingredients: SB Chocolate Cake (recipe below), 2 pkgs sugar-free instant chocolate pudding (prepared), 16oz lite cool whip, fresh or frozen strawberries, raspberries and blueberries.

Directions: In a large glass bowl, crumble 1/2 of the chocolate cake, on top of that layer 1/2 of the berries followed by 1/2 of the pudding and 1/2 of the cool whip. Repeat all layers and garnish the top with additional berries if desired. Chill until ready to serve.



CHOCOLATE CAKE

1 1/2 cups whole-wheat flour

1 cup Splenda

3 tab cocoa

1 tsp baking soda

1/2 tsp salt

6 Tab Canola oil

1 Tab white vinegar

1 tsp Vanilla

1 cup cold water

Preheat oven to 350 degrees, sift the dry ingredients directly into an 8 or 9 inch square cake pan.

Make three depressions in the flour mixture...put oil in one, vinegar in second and vanilla in third..

pour water over all and mix with a fork until well blended.

Bake at 350 for 20 to 30 min..until toothpick in center comes out clean......in my oven i have found takes about exactly 20 min.

The cake is a little grainy. I tried it straight from the pan and wasn't too sure about it but went ahead and assembled the dessert. Since I made it the day before, by the time we actually ate it some of the juices from the berries and moisture from the pudding had soaked in so it really didn't taste too bad at all. I could tell the difference but the other dinner guests couldn't and they all had seconds so I take that as a good sign.
