I am starting P2 this weekend and I wanted to make the oatmeal pancakes. Has anyone made these yet? Are they good? I was also thinking of making the batter in advance and keeping it in the fridge. Do you think this will work?

TIA

I made them this weekend and did not like them at all!!! My husband, 10 year old and 8 year old didn't like them either. My 1 year old loved them and ate alot of them. I froze the other ones for her. They migh be a "little" better with some Splenda in the batter.

I loved them!! Put some sugar-free jelly on them and they rocked!! So I guess it depends on the person. Try them and let us know what you think ??

I like to make them with splenda and either cinnamon or cocoa powder and a little natural PB. YUMMY!

Cheryl,

These are great! I agree, put some Splenda, vanilla & cinnamon.

My only complaint is they use a lot of egg whites. You can search this message board for other recipes (just type in pancakes above, under "find messages about") but they're really best with all the egg whites.

My husband and I LOVE these. I make them with two eggs instead of all those egg whites. I follow the recipe and then add blueberries to them. They are soooo good! I usually only cook breakfast during the weekend, I have been waking up early to make these before I go to work during the week. Even Dh will make his own before heading out for work too. I even make them saturday and sunday back to back for breakfast. They are very filling too. I hope you have a better experience if you make them again.

goood luck!

I kept the batter in the fridge for a couple of weeks, and it turned out fine. I added wild blueberries and cinnamon to the batter, and I thought they were fantastic, but I REALLY love oatmeal.
