Has anyone ever tried to freeze their ricotta or yogurt dessert so that it resembles ice cream? I'm not looking to freeze it long-term. I just want to have something that reminds me of ice cream!

Ideas?

Frozen strawberries w/ FF pudding is GREAT! Anything else frozen that is legal in P2?

Strawberry Buttermilk Ice (I think this was posted by cl-its susan) from SBD cookbook

serves 2

1/2 c sugar substitute

1/2 c water

1 1/4 c quartered strawberries (about 1 1/2 cups whole berries)

1/2 c buttermilk

In large bowl, combine sugar substitute and water. In blender/food processor, blend strawberries till smooth. Add strawberries and buttermilk to sugar substitute mix and stir till well combined. Pour into freezer-safe contianer. Freeze overnight. Remove from freezer 30 mins before serving.

I'm making this today to enjoy tomorrow!

At Susan's suggestion I froze my peanut butter yogurt dessert... SO YUMMY! Definitely like ice cream. Also good half-frozen and not frozen at all. Usually I am so excited to eat it that I can't wait for it to freeze, so I have it unfrozen :)

I found in ph 2 that is the closest to ice cream is the following:


Fat-free or Lite Cool whip (~1/2 cup)


Frozen berries (thawed)


Chopped nuts (I like chopped walnuts, dh likes peanuts)


put everything in a bowl, stir a little and yummy!
